Semi-Skinny Buttermilk Chocolate Cake

I had a big sweet tooth this afternoon so nothing better than baking a chocolate cake to satisfy it! I’ve been inviting my boys to join me in the kitchen since they are old enough to help significantly. They are learning the ropes & are proud of themselves. Needless to say I’m proud too 😉 So here it is, the finish product that transpired in our kitchen…


Semi-Skinny Buttermilk Chocolate Cake

1/2 cup light margarine
1 cup Brown sugar; packed
1/2 cup stevia
1 Egg
1 cup buttermilk (1 cup skim milk + 1 tbs vinegar)
1 tsp vanilla extract
1 cup all purpose flour + 1/2 cup wheat flour
3/4 cup cocoa powder
1/4 tsp baking soda
1/2 tsp baking powder
Salt- a pinch
1/2 cup sugar free chocolate chip morsels

1 & 1/2 cup powdered sugar
1 tbs cocoa powder
2 tbs sugar free chocolate chips morsels
1 tbs milk
Stir together; will be thick (you want it like that)
Zap in microwave 3x’s at 10 second intervals, stirring in between until morsels are melted.

Preheat oven at 325 Take a loaf pan that is 9 by 5 inch and grease or line with parchment paper or foil and set aside.
In a stand mixer, cream the butter & sugar until creamy.
Add the egg & beat well. Mix the vanilla & buttermilk. Beat well to mix in.
Sift the flour,cocoa,soda,baking powder & salt directly into this wet mixture.
Stir in the morsels using a wooden/silicone spatula until mixed well.
Pour this batter into the loaf pan & bake for about 60 minutes or until a toothpick comes out clean.
Cool the cake in the pan for a few minutes before you transfer onto a wire rack, pour glaze & cool completely.
Serve & Indulge!!

Banana Pudding Cake

French Vanilla Cake mix

1-1.5 oz box of Fat Free Sugar Fat Free Pudding

1-1 oz box of Fat Free Sugar Fat Free Pudding

3 bananas; sliced & divided

1 container of light cool whip

Prepare cake mix according to package

Sprinkle in the 1 oz box of pudding (dry)

Separate batter into 2 round pans; bake according to directions

While the cake is baking, prepare pudding according to package

Once pudding is set, fold in the 2 cut banana slices into pudding

Ok, now that the cake is baked, let cool completely…can speed it up by placing them in the freezer for about 15 minutes

Start layering once cooled

Pour pudding on top of one cake round then place the other cake round on top, spoon cool whip on the top cake round & arrange banana slices as desired

Serve & Indulge!
